My personal place I guess this is where I am supposed to put things about
myself and what makes me tick. I guess from now if you have seen the
other pages you will know that sport and being makes up a big part of that,
Hockey, Triathlons but I think more it is just being active and healthy.
I think this stems back from my teenage and early 20 years when I was very
big, I used to weigh something like 106 kgs. While I was walking to work
one day when I was working for AAPT in Melbourne I was walking past a guy
handing out leaflets about weight loss, so I decided why the hell not.
Ever since then I have never looked back and I would like to think I am doing
well at it, keeping fit and healthy but I must admit I get a bit paranoid
sometimes, I guess just a fear of how easy it can be to get back to how I was,
and I swore I would never get like again.
I have learned to listen to my body I think and I generally do what it
tells me to do, although sometimes I probably do a bit too much, but if it
tells me to take a nap, look out floor, nap time it is. I love to eat, but who
doesn't right ? I think one of the main reasons I exercise so much is because
then I can eat so much more, its fantastic and Vivien gets to refer to me as
her little Hoover. Since I have moved up I have tried to be good food
wise and I am cooking heaps and eating pretty darn well if I do say so myself,
but without doubt I owe that to Vivien and her years of showing me how to eat
properly. So now I can whip up a salad in a couple of minutes, grill
some chicken in marinade, maybe some beef stir fried and vegetables, grilled
fished and I am becoming a wiz with the beater using it make things; Carrot
cake, Honey and Banana Cake, Banana and Blueberry Tart, Bread and butter
pudding and I must admit a staple of my diet for the last year now; Honey and
Oat bars; awesome in fact so good here is the recipe.
Mikeys' Honey Oat Bars
-
160 gms Butter
- 1 Cup Rolled Wholemeal oats
- 1 Cup sultanas (For American viewers these are dried grapes or 'Rasins'
as you might call them, thanks Kim.
- 1/2 Cup coconut
- 1/2 Cup Raw brown sugar
- 1/2 Cup Sifted Wholemeal S/R Flour
- 1 Tablespoon honey
- Add dry ingredients into a large mixing bowl and with hands mix until all
ingredients are well mixed.
- Melt Butter and Honey in small saucepan. NB Just melt
the honey and butter keep the heat low and try not to boil it.
- Mix in with dry
ingredients with hands until the mixture is well combined and all dry
ingredients are covered.
- Place in a buttered (spray is good) small size baking
dish.
- Heat on moderate to low oven until golden brown.
- The slower they cook
the better so the sultanas do not burn.
- NB For a bit of kick just before they are finished cooking remove
the try and pour your favourite yoghurt on top with a good thick cover
place back in the oven a allow to cook for a further 5 or so minutes to
back the yoghurt on.
